ice cream sandwich my hubby purchased
at an art fair this summer.
We had to go back and get another.
And another.
So I just had to make a home version.

As for the banana ice cream filling,
let me share some tips.
If you like a light touch of banana flavor,
in your blender combine
1 quart vanilla ice cream
with 1 frozen banana.
If you have any trouble with blending,
add 1/4 cup of milk.
For a more intense banana flavor,
add another frozen banana.
When you blend the ice cream and
frozen banana, the mixture becomes softer.
This makes it perfect for spreading
on the bottom cookie. Then just lightly
press on the top cookie and
wrap in aluminum foil.
Place in the freezer for several hours
so that the ice cream hardens.
